Coconut Roti


COCONUT ROTI




Coconut roti is a Sri Lankan delicacy which is easy and quick to make. Moreover it taste amazing with any side dish. It is simple and soft with a chilli-coconut flavor. 

Ingredients:

1. All purpose flour- 1 cup
2. Grated coconut- 3/4 cup
3. Chopped green chilli- 2
4. Coconut oil- 1 tbsp
5. Salt- as needed
6. Warm water- as needed

In a large mixing bowl, mix flour, coconut, green chilli, coconut oil and salt. Mix well to form a crumble. Pour enough warm water and knead into a soft and smooth dough. Cover dough with a damp cloth for 20 minutes.

Make medium size balls out of the dough and flatten them. Cook on a hot tava on both sides until done.

Serve hot with any side dish of your choice.
