Dried Bilimbi / Irumban Puli Pickle


DRIED BILIMBI PICKLE




Dried Irumban Puli pickle is a simple, spicy and delicious pickle. This recipe is a pickle without using vinegar.

Ingredients:

1. Bilimbi / Irumbanpuli- 50
2. Chilli powder- 3 tbsp
3. Salt- as needed
4. Gingelly oil / Nallenna- 2 tbsp
5. Garlic- 15
6. Chopped ginger- 2 tbsp
7. Mustard- 1 tsp
8. Fenugreek seeds- 1/4 tsp
9. Curry leaves- 2 spring
10. Turmeric powder- 1/2 tsp

Wash bilimbi and wipe with a dry towel. Marinate it with 2 tbsp of chilli powder and salt. Dry it under sun for 2 to 3 days or till it becomes dry without any water content.

Heat gingelly oil. Splutter mustard and fenugreek. Add ginger, garlic and curry leaves. Saute it. Mix  1 tbsp of chilli powder and turmeric powder. Saute till oil appears. Add dried bilimbi and mix well. Adjust seasoning and switch off the flame.

Store in an air tight glass jar and use.
