Tomato Egg Curry


TOMATO EGG CURRY




Delicious, flavorful and spicy egg curry. It is very easy to make and taste amazing when served as a side dish.

Ingredients:

1. Hard boiled eggs- 6
2. Chilli powder- 1 1/2 tbsp
3. Turmeric powder- 1/2 tsp
4. Coriander powder- 3 tsp
5. Ginger- 1 inch piece
6. Garlic- 2
7. Garam masala- 1 tsp
8. Coconut oil- 1 tbsp
9. Cumin seeds- 1/2 tsp
10. Onion- 2
11. Green chilli- 1
12. Tomato- 3
13. Water- 2 cups
14. Thick coconut milk- 1 cup
15. Salt- as needed
16.Coriander leaves- 1 tbsp

Blend tomato into a puree.

Heat coconut oil. Crack cumin seeds. Add onion, ginger, garlic and green chilli. Saute till onion turns golden brown. Mix chilli powder, turmeric powder, coriander powder and garam masala. Saute for 2 minutes. Add tomato puree and saute it well. Saute till tomato puree looks cooked. Pour water and boil till the gravy becomes thick. Add salt. Add egg and coconut milk. Stir well. Boil for 2 minutes and mix coriander leaves. Stir well and switch off the flame.

Serve hot with appam, puttu, flat breads etc.
