Shahi Bindhi Masala


SHAHI BINDHI MASALA / LADIES FINGER




Ladies finger in a rich, creamy masala. It goes well as a side dish for any variety of flat breads. 

Ingredients:

1. Ladies Finger- 1/4 kg
2. Chaat masala- 1/2 tsp
3. Salt- as needed
4. Oil- 3 tbsp
5. Cumin seeds- 1/2 tsp
6. Asafoetida- 1/4 tsp
7. Chopped onion- 1
8. Ginger paste- 1 tbsp
9. Garlic paste- 1 tbsp
10. Green chilli- 2
11. Chopped tomato- 2
12. Cashew nut paste- 2 tbsp
13. Gram flour- 1 tbsp
14. Turmeric powder- 1/4 tsp
15. Coriander powder- 1/2 tsp
16. Yogurt- 1/3 cup
17. Water- 1 cup
18. Fresh cream- 2 tbsp
19. Garam masala- 1/2 tsp
20. Dry fenugreek leaves / kasuri methi- 1/2 tsp

Cut the crown of each ladies finger and slice into two. Marinate it with chaat masala and salt.

Heat 2 tbsp of oil. Add marinated ladies finger and saute till it becomes tender. Keep aside.

Heat 1 tbsp of oil. Splutter cumin and roast asafoetida. Add onion, ginger paste, garlic paste and green chilli. Saute till it turns translucent. Add tomato and cook till it turns mushy. Mix cashew paste and saute for 2 minutes. Add gram flour, turmeric powder and coriander powder. Mix well. Add curd and water. Stir well and bring it to a boil. Add ladies finger and mix well. Adjust seasoning. Mix cream, garam masala and fenugreek leaves. Stir well and switch off the flame.

Serve hot with roti.
