Broken Wheat Payasam
BROKEN WHEAT PAYASAM
A traditional Kerala dessert made with broken wheat and coconut milk. It is so delicious that its hard to resist.
Ingredients:
1. Broken wheat- 1/2 cup
2. Thin coconut milk- 3 cup
3. Sugar- 1/ 2 cup
4. Thick coconut milk- 1 1/2 cup
5. Condensed milk- 3/4 cup
6. Cardamon powder- 1 tsp
7. Salt- pinch
8. Ghee- 1 tbsp
9. Cashew nuts and raisins- 1 tbsp each
Wash broken wheat and drain. Cook it in a pressure cooker along with sugar and thin coconut milk. After 2 whistles, reduce flame into simmer and cook for 8 minutes. Let the pressure go by itself.
Open cooker and transfer into a pan. Place it on stove and boil till it becomes thick. Pour thick coconut milk, condensed milk, cardamon powder and salt. Mix well. Boil for 1 minute and turn off the flame.
Heat ghee. Roast cashew nuts and raisins separately. Mix it with the prepared kheer and stir well.
Serve hot.
