Vellayappam
VELLAYAPPAM
Vellayappam is a very common breakfast dish in Kerala. It is healthy, delicious and easy to prepare.
Ingredients:
1. White rice / Pachari- 2 cup
2. Urad dal / Uzhunn- 2 tbsp
3. Cooked rice- 1/4 cup
4. Yeast- 1 tsp
5. Sugar- 3 tbsp
6. Salt- as needed
Soak rice and uzhunn for 4 to 5 hours.
Grind rice, uzhunn, cooked rice, yeast and sugar adding enough water into a medium consistency batter. Pour it into a deep bottomed vessel and keep it overnight or for 7 to 8 hours for fermenting.
Once fermented, mix adequate amount of salt.
Heat a non stick pan. Pour a ladle full of batter and do not spread it. Cover with a lid and cook on medium heat. Cook till done.
Serve hot with stew.
