Vegetable Rollers
VEGETABLE ROLLERS
This is a delicious and mouth watering baked snack recipe. It has the goodness of lots of vegetables and its easy and simple to make.
Ingredients:
1. All purpose flour- 1 1/2 cup
2. Salt- 1/2 tsp
3. Sugar- 1/2 tsp
4. Yeast- 1/2 tsp
5. Olive oil- 1 tbsp
6. Luke warm water- to knead the dough
In a large mixing bowl, mix flour, salt,sugar, yeast and olive oil. Pour luke warm water and knead into a soft and smooth dough. Transfer the dough into a greased bowl and keep it in a warm place till it doubles in volume. It will take 3 to 4 hours.

8. Pepper powder- 1 tsp
9. Mixed herbs (Oregano, Chilli flakes, thyme, dill etc)- 1 tbsp
10. Salt- as needed
11. Chilli powder- 1/2 tsp
12. Chopped onion- 1/4 cup
13. Chopped capsicum- 1/4 cup
14. Chopped green chilli- 1
15. Coriander leaves- 1 tbsp
16. Grated cheese- 1/2 cup
For making the sauce drop 2 tomatoes in hot water for 10 minutes. Transfer tomatoes into a bowl of chilled water and peel the skin off. Blend peeled tomato into a puree. Transfer tomato puree into a pan. Mix chilli powder, 1/2 tsp of pepper powder, pinch of salt and mixed herbs. Boil it till it becomes thick and has a saucy consistency.
In a bowl, mix 1 chopped tomato, onion, capsicum, 1/2 tsp of pepper powder, green chilli and coriander leaves.
Preheat oven at 350 F.
Punch down the dough and roll it into a rectangle sheet. It should not be very thin. Spread tomato sauce. Add little salt to the vegetable mix and sprinkle them all over the rectangle sheet. Top it with cheese. Roll the dough on both sides to bring both edges to the middle to form a log. Slice the dough as medium sized pieces and arrange it on a baking tray. Bake for 25 minutes until the crust turns golden.
Once baked, let it cool down completely before serving.
Enjoy with your tea or coffee.
Notes
Add salt in the vegetable mix only just before sprinkling it on the dough. Else vegetable will become watery.
