Turkish Soup Bread


TURKISH SOUP BREAD




This is a common bread served with soups in Turkey. This bread is very light in texture and chewy to the mouth. It is a must in every Turkish home during Ramadan.

Ingredients:

1. All purpose flour- 1 1/2 cup
2. Wheat flour- 1 cup
3. Olive oil- 1 tbsp
4. Milk- 1/4 cup
5. Water- 1/2 cup
6. Yeast- 1/2 tbsp
7. Sugar- pinch
8. Black sesame seeds- 1 1/2 tbsp
9. Salt- 3/4 tsp
10. Egg- 1 for eggwash

Slightly heat olive oil, milk and water. Turn off the flame and mix yeast, salt and sugar. Keep it aside for 5 minutes.

In a large mixing bowl, mix all purpose flour, wheat flour and 1 tbsp of sesame seeds. Pour in the yeast mix and knead a soft dough. Add more water if required. The dough should be soft yet sticky. Knead well for 10 minutes. Cover the dough with a cloth and let it rise for 40 minutes. 

Grease a round baking pan.

Punch down the dough and knead again to form a smooth elastic yet soft dough. Roll if into a thick round disc and transfer into the greased pan. Gently stretch the dough to the sides of the pan. Using index finger or the handle of a wooden spoon, poke holes or make deep indentations into the dough. 
Beat egg with 1 tbsp of water and apply egg wash over the dough. Sprinkle 1/2 tbsp of sesame seeds all over the dough. Cover it with a cloth and allow to rise for 5 minutes.

Preheat oven at 220 C.

Bake bread for 15 minutes. After 15 minutes, reduce temperature to 190 C and bake for 15 more minutes.

Let it cool down a bit before serving. Cut and serve along with your favorite soup.
