Tomato Pickle


TOMATO PICKLE




A wonderful tangy pickle that goes with every dish. It is quite easy to make.

Ingredients:

1. Tomato- 5
2. Gingelly oil- 1 tbsp
3. Coconut oil- 1 tbsp
4. Garlic- 10
5. Mustard- 1 tsp
6. Curry leaves- 1 spring
7. Green chilli- 3
8. Salt- as needed
9. Chilli powder- 2 tbsp
10. Fenugreek powder- 1/4 tsp
11. Asafoetida / kayam- 1/4 tsp
12. Vinegar- 1/3 cup

Cut tomato into big pieces.

Heat coconut oil and gingelly oil together in a pan. Splutter mustard. Add green chilli, curry leaves and garlic. Saute till wilted. Mix chilli powder, fenugreek powder and kayam. Roast till a nice aroma comes. Add tomato and cook till it becomes dry. Add seasoning. Switch off the flame and pour vinegar. Mix well.

Transfer into a glass jar once it reaches room temperature.
