Tomato Coconut Curry


TOMATO COCONUT CURRY




Tomato Coconut curry is a delicious Indian recipe, served as a side dish for rice. It is very easy to make and its packed with flavors.

Ingredients:

1. Chopped tomato- 2
2. Grated coconut- 1 1/2 cup
3. Shallots- 3
4. Kashmiri chilli powder- 1 tbsp
5. Turmeric powder- 1/4 tsp
6. Coriander powder- 1/2 tsp
7. Coconut oil- 1 tbsp
8. Mustard- 1 tsp
9. Green chilli- 5
10. Ginger- 1/2 inch piece
11. Garlic- 3
12. Curry leaves- 1 spring
13. Salt- as needed
14. Kudampuli / malabar tamarind- 1
15. Fenugreek powder- pinch

Grind coconut, shallots, chilli powder, turmeric powder, coriander powder and salt into a fine paste adding enough water.

Heat oil. Splutter mustard. Add green chilli, ginger, garlic and curry leaves. Slightly roast it. Add tomato, ground coconut paste and kudampuli. Bring it to a boil. Add more water if you feel the curry is too thick. Mix fenugreek powder. Boil till tomatoes are cooked well and the curry reaches the right consistency.

Serve hot with rice.
