Sri Lankan Egg Curry


SRI LANKAN EGG CURRY




Super aromatic Sri Lankan egg curry for any occasions. It is thick, creamy and spicy.

Ingredients:

1. Hard boiled eggs- 5
2. Oil- 2 tbsp
3. Curry leaves- 1 spring
4. Onion- 2
5. Cardamon- 2
6. Cinnamon- 1 inch piece
7. Clove- 2
8. Bay leaf- 2
9. Cumin seeds- 1 tsp
10. Fennel seeds- 1/2 tsp
11. Peppercorns- 1 tsp
12. Tomato- 1
13. Turmeric powder- 1/2 tsp
14. Grated coconut- 1/2 cup
15. Pandan leaf- 1
16. Salt- as needed
17. Green chilli- 3

Heat oil. Drop the eggs and fry them till they turns golden brown evenly around.. Drain and keep it aside.

To the same oil, add curry leaves and slightly fry it. Add onion and saute till it turns translucent. Add cardamon, cinnamon, cloves, bay leaf, cumin, fennel, peppercorns, tomato, turmeric powder, pandan leaf, salt and coconut. Saute everything for 3 to 4 minutes. Switch off the flame and let it cool down completely. Transfer it into a blender and grind it into a fine paste.

Pour the ground paste into a pan and put it back on stove. Cook in simmer for a few minutes. Pour enough water to get a creamy gravy and bring it to a boil. Add green chilli and fried eggs. Cook till the gravy becomes thick.

Serve hot as a side dish.
