Rasam
RASAM
Rasam is a traditional south Indian soup and Kerala meals is incomplete without rasam. Its spicy, flavorful and delicious.
Ingredients:
1. Tamarind- 2 tsp
2. Coconut oil- 1 1/2 tbsp
3. Fenugreek seeds- 1/2 tsp
4. Mustard- 1 tsp
5. Curry leaves- 1 spring
6. Cumin seeds- pinch
7. Red chilli- 4
8. Ginger- 1 inch piece
9. Garlic- 7
10. Chilli powder- 1 tsp
11. Coriander powder- 1 tsp
12. Turmeric powder- pinch
13. Salt- as needed
14. Crushed pepper- 1 tsp
15. Tomato- 3
16. Coriander leaves- 1 1/2 tbsp
17. Asafoetida / kayam- 1/2 tsp
Crush ginger and garlic.
Soak tamarind in 1/4 cup of water and squeeze out its pulp.
Cut tomato into medium size pieces.
Heat coconut oil. Roast fenugreek. Splutter mustard. Add curry leaves, cumin and red chilli. Slightly roast it. Add crushed ginger and garlic. Saute till its raw smell disappears. Reduce flame into simmer and add chilli powder, coriander powder, turmeric powder and pepper powder. Saute for 2 minutes. Add tomato and 1/2 tbsp of coriander leaves. Saute for 1 minute. Make sure not to cook till the tomatoes turn mushy. Add tamarind water and 3 glasses of water. Mix well. Adjust seasoning. Let it boil. Mix kayam and 1 tbsp of coriander leaves. Stir well and switch off the gas.
Serve hot with rice.
