Potato Coconut Milk Curry
POTATO COCONUT MILK CURRY
Soft potatoes in a mildly spiced, thick and creamy coconut milk gravy. It is delicious and can be served with any Indian flat breads, appam, idiyappam etc.
Ingredients:
1. Potato- 2
2. Coconut oil- 1 tbsp
3. Mustard- 1 tsp
4. Onion- 1
5. Garlic- 3/4 tbsp
5. Ginger- 3/4 tbsp
6. Green chilli- 6 to 7
7. Curry leaves- 1 spring
8. Turmeric powder- 1/4 tsp
9. Salt- as needed
10. Coriander powder- 1 tbsp
11. Fennel powder- 1/4 tsp
12. Thick coconut milk- 1/2 cup
13. Water- 1 cup
Cook potato in a pressure cooker until done. Peel and cut into medium sized cubes.
Heat coconut oil in a pan. Splutter mustard. Add onion, ginger, garlic, green chilli and curry leaves. Saute till it turns translucent. Mix turmeric powder, coriander powder and fennel powder. Saute for 2 minutes. Add potato and water. Add seasoning. Mix well and bring it to a boil. Boil till it becomes almost thick. Pour coconut milk and mix well. Switch off flame when its about to boil.
Serve hot as a side dish.
