Pineapple Rasam


PINEAPPLE RASAM




Spicy, tangy and mildly sweet rasam made with pineapple, lentils and spices. Pineapple brings a unique flavor and taste to the rasam. 

Ingredients:

1. Chopped pineapple- 1/4 kg
2. Lentil- 1/2 kg
3. Tamarind- 50 grams
4. Chilli powder- 1 tbsp
5. Coriander powder- 1 tbsp
6. Asafoetida / kayam- 1/8 tsp
7. Pepper powder- 1 tsp
8. Turmeric powder- pinch
9. Crushed garlic- 6
10. Salt- as needed
11. Coriander leaves- 1 tbsp
12. Curry leaves- 1 spring
13. Coconut oil- 1 tbsp
14. Mustard- 1 tsp
15. Red chilli- 6

Soak tamarind in 1/4 cup of water for 15 minutes and squeeze out its pulp.

Cook lentil in 1 litre of water in a pressure cooker for 2 whistles. Let the pressure go by itself. Drain and take the lentil water. Discard lentil. 

Mix tamarind water, chilli powder, coriander powder, kayam, pepper powder, turmeric powder, garlic, salt and lentil water. Bring it to a boil. Boil till a nice aroma comes from the curry. Add pineapple and boil for 5 minutes in simmer. Mix coriander leaves and stir for 1 minute. Switch off the flame.

Heat coconut oil. Splutter mustard. Add red chilli and curry leaves. Slightly roast it and turn off the flame. Pour this over the prepared rasam and stir well.

Serve hot with rice.
