Capsicum Coconut Curry
CAPSICUM COCONUT CURRY
Capsicum coconut curry is an easy to make and delicious curry recipe which is perfect to be served as a side for Indian breads.
Ingredients:
1. Capsicum chopped into small cubes- 11/2 cup
2. Oil- 2 tsp
3. Grated coconut- 1 cup
4. Onion- 1
5. Curry leaves- 1 spring
6. Ginger garlic paste- 1 tsp
7. Green chilli- 2
8. Turmeric powder- pinch
9. Coriander powder- 1 tsp
10. Coriander leaves- 1 tbsp
11. Salt- as needed
Grind coconut into a fine paste adding little water.
Heat oil in a pan. Add onion, green chilli, curry leaves and ginger garlic paste. Saute till wilted. Add ground coconut paste, capsicum, turmeric powder and coriander powder. Mix well. Pour 1/4 cup of water and bring it to boil. Add salt. Mix coriander leaves once everything is cooked well and switch off the flame.
Serve hot.
