Pazham Nirachath
PAZHAM NIRACHATH
Delicious banana stuffed with sweet coconut mix is a favorite snack for all keralites. It is a rich and tasty tea time snack from Malabar.
Ingredients:
1. Ethappazham / Kerala banana- 3
2. All purpose flour- 1 cup
3. Rice flour- 1 tbsp
4. Salt- pinch
5. Sugar- 4 tbsp
6. Cooking soda- 1/8 tsp
7. Oil- for frying
8. Ghee- 1 tsp
9. Grated coconut- 1/2 cup
10. Cardamon powder- 1/4 tsp
11. Chopped cashew nuts and raisins- 1 tsp each
In a large mixing bowl, add flour, rice flour, salt, 1 tbsp of sugar and cooking soda. Pour some water and make a thick batter.
Heat ghee. Add coconut, 3 tbsp f sugar, cardamon powder and chopped nuts. Mix well. This is the filling.
Peel banana. Make a shallow slit lengthwise. Gently stuff the filling and using your hands push the stuffing inside the banana as much as you can.
Dip the stuffed banana in the prepared batter. Batter should coat the banana well. Deep fry in hot oil till light golden. Drain on an absorbent paper.
Serve hot.
