Mangalorean Vegetable Biriyani


MANGALOREAN VEGETABLE BIRIYANI




This is an easy biriyani recipe from Mangalore and it taste divine. A spiced, fragrant biriyani with mixed vegetables.

Ingredients:

1. Biriyani rice / jeeragasala rice- 1 cup
2. Grated coconut- 3 tbsp
3. Coriander seeds / mallikkuru- 1 tbsp
4. Red chilli- 3
5. Cinnamon / patta- 1/2 inch piece
6. Cardamon / elakka- 3
7. Cloves / grambu- 3
8. Fennel seeds / perumjeeragam- 1 tsp
9. Ginger- 1 inch piece
10. Garlic- 4
11. Cumin seeds / jeeragam- 1 tsp
12. Oil- 2 tbsp
13. Onion- 1
14. Chopped tomato- 1
15. Curry leaves- 1 spring
16. Green chilli- 1
17. Salt- as needed
18. Diced carrot- 1/2 cup
19. Diced potato- 1/2 cup
20. Frozen green peas- 1/2 cup
21. Coriander leaves- for garnish

Grind coconut, coriander seeds, red chilli, cinnamon, cardamon, cloves, fennel, ginger, garlic and cumin into a fine paste adding 1 tbsp of water.

Boil 2 cups of water.

Meanwhile, heat oil in a pressure cooker. Add onion and saute till it turns light golden. Add tomato, curry leaves and green chilli. Saute till tomato turns mushy. Mix ground masala and saute for 2-3 minutes. Add carrot, potato and green peas. Saute for 5 minutes. Add rice and saute for 1 minute. Pour 2 cups of boiling water. Adjust seasoning. Close cooker and initially do not put the whistle. Put the whistle on when steam starts coming heavily through the whistle hole and immediately reduce flame into simmer. Cook for exact 5 minutes and switch off the flame. Let it sit for 25-30 minutes.

Open cooker and mix well. Garnish with coriander leaves.

Serve hot with curd salad and pickle.
