Ladies Finger Semolina Fry
LADIES FINGER SEMOLINA FRY
This is an awesome side dish for rice and a great alternative to regular stuffed ladies finger dishes. It is crispy and crunchy with tasty flavors.
Ingredients:
1. Ladies finger- 10
2. Semolina- 1/3 cup
3. Kashmiri chilli powder- 1 tsp
4. Turmeric powder- 1/2 tsp
5. Salt- as needed
6. Asafoetida / kayam- pinch
7. Dry mango powder- 1/4 tsp
8. Ginger garlic paste- 1 tsp
9. Oil- 2 tbsp
Wash ladies finger and wipe with a dry cloth. Cut off the tail and slice them half.
In a bowl, mix chilli powder, semolina, turmeric powder, salt, kayam, dry mango powder and ginger garlic paste. Add ladies finger and mix well or squeeze everything together. Let it sit for 30 minutes.
Heat oil. Place ladies finger along with the semolina. Cook closed in low flame for 5 minutes till it gets cooked well. Open and flip ladies finger. Continue to roast on medium flame. Cook till ladies finger turns crispy and golden. Make sure not to burn the semolina.
Serve hot as a side dish for rice.
