Kuska Biriyani


KUSKA BIRIYANI




South Indian style spiced flavorful biriyani. It is a tasty, plain vegetable biriyani without much vegetables. 

Ingredients:

1. Basmati rice- 1 cup
2. Oil- 1 1/2 tbsp
3. Bay leaf- 1
4. Cloves- 2
5. Cinnamon- 1/2 inch piece
6. Star anise- 1
7. Cardamon- 2
8. Fennel seeds- 1/2 tsp
9. Onion- 1
10. Ginger garlic paste- 1 tsp
11. Green chilli- 2
12. Tomato- 1/2 tomato
13. Chilli powder- 1/2 tsp
14. Salt- as needed
15. Coriander powder- 1 1/2 tsp
16. Mint leaves- 1 tbsp
17. Coriander leaves- 1 tbsp
18. Water- 1 cup
19. Coconut milk- 1 cup

Wash rice and drain well.

Mix water and coconut milk. Boil it.

Heat oil in a pressure cooker. Roast bay leaf, cloves, cinnamon, star anise, cardamon and fennel. Add Onion, ginger garlic paste and green chilli. Saute till it turns translucent. Add tomato and cook till it turns mushy. Mix chilli powder and coriander powder. Saute for 1 minute and add mint and coriander leaves. Saute it. Add rice and seasoning. Roast rice for 1 minute and pour boiling water-coconut milk mix. Stir well and close cooker. Initially do not put the whistle on. Put the whistle when steam starts coming heavily through the whistle hole and immediately turn flame into simmer. Cook for exact 5 minutes and turn off the gas. Let it sit for 20 to 25 minutes.

Open cooker and fluff it up with a fork or spoon.

Serve hot with curd salad and pickle.
