Kunju Pathiri


KUNJU PATHIRI




Kunju pathiri is a famous Malabar delicacy which is very easy to prepare for breakfast.

Ingredients:

1. Roasted rice flour- 1 cup
2. Hot water- as required
3. Coconut oil- 1 tbsp
4. Mustard- 1 tsp
5. Curry leaves- 1 spring
6. Red chilli- 2
7. Shallots- 2
8. Turmeric powder- 1/4 tsp
9. Green chilli- 2
10. Garlic- 2
11. Salt- as needed

Take rice flour in a large bowl. Add some salt. Pour hot water and knead into a soft and smooth dough. Make small balls and slightly flatten them to make coin shaped pathiri. Cook it in a steamer for 20 minutes.

Grind coconut, shallots, turmeric powder, garlic, green chilli, curry leaves and some salt without adding water.

Heat coconut oil. Splutter mustard. Add red chilli and slightly roast it. Add steamed pathiri and ground coconut paste. Mix well. Cook in simmer for 5 minutes.

Serve hot with any spicy chicken or beef curry.
