Kerala Duck Roast


DUCK ROAST




Duck roast is an authentic and popular dish in Kerala. It is a much loved Christian food and is a must in all important occasions. It is super delicious and aromatic.

Ingredients:

1. Duck- 800 grams
2. Turmeric powder- 1/2 tsp
3. Pepper powder- 1 1/2 tbsp
4. Salt- as needed
5. Coconut oil- 1 1/2 tbsp
6. Onion- 2
7. Ginger- 1 tbsp
8. Garlic- 4
9. Curry leaves- 3 spring
10. Green chilli- 3
11. Chilli powder- 1/2 tsp
12. Coriander powder- 2 tbsp
13. Garam masala- 1 tsp

Marinate duck with turmeric powder, 1/2 tbsp of pepper powder and salt. Cook in a pressure cooker adding 1/2 cup of water till done.

Heat coconut oil. Add onion, ginger, garlic, curry leaves and green chilli. Saute well till it turns golden brown. Mix chilli powder, coriander powder, 1 tbsp of pepper powder and garam masala. Saute till oil appears. Add cooked duck along with the stock and mix well. Cook till it becomes almost dry. Turn off the flame and keep it closed for 5 minutes.

Serve hot with appam, rice etc.
