Hummus


HUMMUS




Hummus is a levantine dip or spread made from cooked chickpeas. It might look beige and boring in the bowl, but its an extremely delicious dip that goes well with flat breads and grilled chicken. It has its origin from the middle eastern cuisine.

Ingredients:

1. White chickpea- 1 cup
2. White sesame seeds- 2 tbsp
3. Garlic- 3
4. Cumin powder- 1/4 tsp
5. Lemon juice- 1/2 lemon
6. Salt- 1/2 tsp
7. Olive oil- 1/4 cup
8. Kashmiri chilli powder- pinch

Soak chickpeas for 5 to 6 hours. Cook in a pressure cooker adding enough water till done. Drain and keep it aside.

Dry roast sesame in low flame till it turns light golden. Grind it into a fine powder.

In a blender, add cooked chickpea, sesame powder, garlic, cumin powder, lemon juice, salt and olive oil. Grind it into a smooth and fine paste. Transfer it into a bowl and garnish with 2 tsp of olive oil and sprinkle kashmiri chilli powder.

Serve with Arabic flat breads, grilled chicken or charcoal chicken.
