Golden Cucumber / Vellarikka Moru Curry


GOLDEN CUCUMBER / VELLARIKKA MORU CURRY




This is a traditional side dish from Kerala and is a must item of Kerala sadhya. 

Ingredients:

1. Golden cucumber cubes- 1 1/4 cup
2. Grated coconut- 1 cup
3. Cumin seeds- pinch
4. Curd- 1/2 kg
5. Salt- as needed
6. Turmeric powder- 1 tsp
7. Green chilli- 3
8. Coconut oil- 1 tbsp
9. Mustard- 1 tsp
10. Fenugreek seeds- pinch
11. Shallots- 4
12. Curry leaves- 1 spring
13. Red chilli- 2

Grind coconut, cumin, curd and salt into a fine paste.

Cook cucumber with turmeric powder, green chilli and 1 cup of water. Cook till it becomes soft. Add ground coconut-curd paste and mix well. Do not boil. Switch off the flame when its about to boil.

Heat coconut oil. Splutter mustard and fenugreek. Add sliced shallots, red chilli and curry leaves. Saute till shallots turn golden. Turn off flame and pour this over the prepared curry. Stir well.

Serve hot as a side dish for rice.
