Eggplant Fry


EGGPLANT FRY




Simple and easy eggplant or brinjal fry is a delicious side for rice. This taste like a vegetarians fish fry.

Ingredients:

1. Eggplant big- 1
2. Chilli powder- 2 tsp
3. Turmeric powder- 1/2 tsp
4. Salt- as needed
5. Oil- for shallow frying

Cut eggplant into round slices. Marinate it with chilli powder, turmeric powder and salt for 30 minutes.

Heat oil and shallow fry eggplant slices on both sides until done. Drain on an absorbent paper.

Serve hot with rice.
