Cucumber Pachadi
CUCUMBER PACHADI
This is a simple curry made with cucumber, curd and coconut. Cucumber pachadi taste best when served as an accompaniment for rice.
Ingredients:
1. Cucumber- 2
2. Green chilli- 4
3. Curry leaves- 1 spring
4. Curd- 1 1/2 cup
5. Grated coconut- 1 cup
6. Mustard- 1 1/4 tsp
7. Salt- as needed
8. Coconut oil- 1 tbsp
9. Red chilli- 2

Peel cucumber and dice into small cubes.
Grind coconut, curd, 1/4 tsp of mustard, 2 green chilli and salt into a fine paste.
Cook cucumber with 2 green chilli, curry leaves and 1/2 cup of water. When its cooked through, add the ground coconut-curd paste and mix well. Do not boil. Turn off the flame when its about to boil.
Heat coconut oil. Splutter 1 tsp of mustard. Add red chilli and roast it. Switch off the flame and pour it over the prepared curry. Stir well.
Serve hot with rice.
