Chena / Yam Stir Fry


YAM STIR FRY




This is a rich and healthy stir fry made with yam. The spices added into this dish makes it a lovely dish to be had any time. It is a simple and easy side dish for rice.

Ingredients:

1. Yam / chena- 400 grams
2. Turmeric powder- 1/4 tsp
3. Salt- as needed
4. Coconut oil- 1 tbsp
5. Mustard- 1 tsp
6. Uzhunn / urad dal- 1 tsp
7. Cumin seeds- 1/2 tsp
8. Red chilli- 2
9. Curry leaves- 1 spring
10. Asafoetida / kayam- pinch
11. Grated coconut- 4 tbsp
12. Coriander leaves- 1 tbsp

Peel yam and cut into medium sized cubes. Cook it in a pressure cooker adding turmeric powder, salt and enough water for 1 whistle. Let the pressure go by itself. Drain and keep it aside.

Heat coconut oil. Splutter mustard. Roast uzhunn, cumin, red chilli, kayam and curry leaves. Add cooked yam and mix well. Add grated coconut and coriander leaves. Mix well. Cook for 2 minutes in simmer.

Serve hot with rice.
