Cabbage Egg Lentil Thoran / Cabbage Mutta Parippu Thoran
CABBAGE EGG LENTIL THORAN
A delicious side for rice or meals with the goodness of fresh cabbage, eggs and protein rich lentils. Hence its a complete nutrients provider recipe.
Ingredients:
1. Chopped cabbage- 3 cup
2. Lentil- 1/4 cup
3. Coconut oil- 1 tbsp
4. Mustard- 1 tsp
5. Grated coconut- 1/2 cup
6. Green chilli- 3
7. Chopped onion- 1
8. Turmeric powder- 1/2 tsp
9. Ginger- 1/2 tsp
10. Curry leaves- 1 spring
11. Salt- as needed
12. Eggs- 2
Cook lentil adding some water. Make sure not to over cook it. Drain and keep it aside.
Heat coconut oil. Splutter mustard. Add cabbage, coconut, green chilli, onion, turmeric powder, ginger, curry leaves and salt. Mix well. Cook closed in low flame until done. Stir occasionally. Make a hole in the center and crack eggs into it. Scramble eggs well and mix with the rest of the thoran. Add cooked lentil and mix well.
Serve hot with rice.
Notes:
Any lentil can be used for this recipe.
