VARUTHARACHA MEEN MURIGAKKA CURRY /

FISH-DRUMSTICK IN ROASTED COCONUT GRAVY



Another exotic and popular fish curry from Kerala. Varutharacha Meen Muringakka Curry is very tasty and is an exceptional seafood delicacy.

Ingredients:

1. Fish- 1/2 kg
2. Drumstick- 2
3. Coconut oil- 2 tbsp
4. Chopped shallots- 1 cup
5. Grated coconut- 3/4 cup
6. Chilli powder- 1 tbsp
7.Turmeric powder- 1/2 tsp
8. Green chilli- 2
9. Curry leaves- 1 spring
10. Chopped ginger- 1/2 tsp
11. Salt- as needed
12. Mustard- 1 tsp
13. Fenugreek seeds- 1/4 tsp
14. Tamarind- lime size

Soak tamarind in 1/4 cup of water for 10 minutes and squeeze out its juice.

Cut drumstick into 2 inch sticks.

Heat 1 tbsp of coconut oil in a pan. Add shallots and saute till wilted. Add coconut and roast it till it turns golden brown. Reduce flame to simmer. Mix chilli powder and turmeric powder. Slightly roast it and switch off the flame. Let it cool down completely. Once cold, grind it into a fine paste adding some water.

In a pan, add ground coconut paste, ginger, curry leaves, drumstick and some salt. Mix well and bring it to a boil. Once drumstick are half way cooked through, add tamarind water and boil for 2 minutes. Add fish and cook till everything is cooked properly. Switch off the flame.

Heat 1 tbsp of coconut oil. Splutter mustard and fenugreek. Pour this over the prepared curry and mix well.

Serve hot as a side dish for rice.
