Tomato / Thakkali Kootu


TOMATO / THAKKALI KOOTU




Tomato kootu is a dish from Tamil Nadu and is served as a side dish in Tamilian Thali. It also goes great with idli and dosa.

Ingredients:

1. Tomato- 2
2. Chilli powder- 1 1/2 tsp
3. Turmeric powder- 1/4 tsp
4. Ginger garlic paste- 2 tsp
5. Fenugreek powder- 1/4 tsp
6. Coriander powder- 1 tsp
7. Salt- as needed
8. Tamarind- 1 tsp
9. Water- 1/2 cup
10. Thick coconut milk- 1/2 cup
11. Oil- 1 tbsp
12. Mustard- 1 tsp
13. Chopped garlic- 1 tsp
14. Curry leaves- 1 spring

Soak tamarind in 1 tbsp of water and squeeze out its pulp.

Transfer chopped tomato into a blender and blend it to make a puree.

In a pan, mix tomato puree, tamarind water, chilli powder, turmeric powder, coriander power, fenugreek powder, ginger garlic paste, salt and 1/2 cup of water. Place it on stove and boil till the gravy becomes thick. Pour coconut milk and mix well. Switch off the flame when its about to boil.

Heat oil. Splutter mustard. Add garlic and curry leaves. Roast it and switch off the flame. Pour this over the prepared curry and mix well.

Serve hot with rice or idli.
