Tomato Drumstick Curry


TOMATO DRUMSTICK CURRY




This is a simple and mildly spiced dish that goes well with rice. Tomato drumstick curry is a very popular curry in South Indian houses.

Ingredients:

1. Drumstick- 2
2. Green chilli- 2
3. Grated coconut- 1 1/2 cup
4. Turmeric powder- 1/2 tsp
5. Chilli powder- 1 tsp
6. Coriander powder- 1/2 tsp
7. Shallots- 3
8. Coconut oil- 1 tbsp
9. Salt- as needed
10. Mustard- 1 tsp
11. Tomato- 2

Grind coconut, turmeric powder, chilli powder, coriander powder and shallots into a fine paste adding some water.

In a pan, cook drumstick pieces and green chilli adding enough water. Once its cooked, add tomato and ground coconut paste. Add water according to the desired curry consistency. Do not add too much water. This curry has a creamy coconut gravy. Add salt and cook well. Switch off the flame.

Heat oil in a pan. Splutter mustard and pour it over the prepared curry. Stir well.

Serve hot with rice.


Notes:

You can add some tamarind water if you want your curry to be more tangy.
