Quail Egg Stew
QUAIL EGG STEW
Simple and delicious egg stew with quail eggs.
Ingredients:
1. Boiled quail eggs- 10
2. Coconut oil- 1 tbsp
3. Cinnamon- 1 inch
4. Clove- 3
5. Cardamon- 2
6. Peppercorns- 1/2 tsp
7. Onion- 1; big
8. Garlic- 4
9. Ginger- 1/2 inch piece
10. Curry leaves- 1 spring
11. Green chilli- 4
12. Chopped Tomato- 1; big
13. Thin coconut milk- 2 cups
14. Thick coconut milk- 1 cup
15. Boiled and mashed potato- 2
16. Salt- as needed
Heat oil in a pan. Roast cinnamon, cloves, cardamon and peppercorns. Add onion, garlic, ginger, curry leaves and green chilli. Saute till wilted. Add tomato and saute till it turns mushy. Pour thin coconut milk and bring it to boil. Boil for 2 minutes and add mashed potato. Mix well. Adjust seasoning. Pour thick coconut milk and stir well. Add eggs and mix well. Switch off the flame when its about to boil.
Serve hot with appam, pathiri, roti etc
