POTATO TOMATO MASALA




Potato and Tomato are a classic combination and potato tomato masala is a very popular curry all over India. It is tasty, flavorful and can be served with any Indian flat bread or rice.

Ingredients:

1. Potato- 2
2. Tomato- 2
3. Oil- 1 tbsp
4. Onion- 3
5. Curry leaves- 1 spring
6. Green chilli- 6
7. Turmeric powder- 1/4 tsp
8. Chilli powder- 2 tsp
9. Ghee- 1 tbsp
10. Mustard- 1 tsp
11. Urad dal / Uzhunn- 1 tsp
12. Salt- as needed

Chop potato into small cubes.

Cut onion into medium size square pieces.

Heat oil in a pan. Add potato, onion, green chilli and curry leaves. Saute it for 5 minutes and mix turmeric powder and chilli powder. Saute for 1 minute and add tomato. Mix well. Pour 1 cup of water and cook closed. Stir occasionally. Cook till veggies are cooked through and the gravy should become thick. Pour more water if its required to cook the potato. Add seasoning and switch off the flame.

Heat ghee. Splutter mustard and urad dal. Pour this over the prepared curry and mix well.

Serve hot.
