Pineapple Chicken


PINEAPPLE CHICKEN




This delicious chicken dish is loaded with fresh pineapple and crunchy cashew nuts. It is juicy, tender and loaded with flavors.

Ingredients:

1. Boneless chicken cubes- 400 grams
2. Ginger garlic paste- 1 tsp
3. Chilli sauce- 2 tsp
4. Chilli powder- 1 tsp
5. All purpose flour- 1/4 cup
6. Corn flour- 1 1/2 tbsp
7. Egg- 1
8. Salt- as needed
9. Oil- as required
10. Capsicum- 1
11. Pineapple cubes- 1 cup
12. Cashew nuts- 10
13. Chopped onion- 1
14. Chopped garlic- 1 tsp
15. Pineapple juice- 1/2 cup
16. Sugar- 1 tsp
17. Soy sauce- 2 tsp
18. Green chilli- 2

Mix chicken with ginger garlic paste, 1 tsp of chilli sauce, chilli powder, all purpose flour, 1 tbsp of corn flour, egg and salt. Let it sit for 15 minutes and then deep fry in hot oil till golden. Drain and keep the fried chicken aside.

Heat 2 tbsp of oil. Slightly shallow fry capsicum, pineapple pieces and cashew nuts for 1 minute.

Heat 1 tbsp of oil in a pan. Add onion, garlic and green chilli. Saute till wilted. Pour pineapple juice and bring it to boil. Mix sugar, salt, 1 tsp of chilli sauce and soy sauce. Dilute 1/2 tbsp of corn flour in 1/4 cup of water and pour it into the curry. Boil till the gravy becomes thick. Add fried chicken pieces, capsicum, pineapple and cashew nuts. Mix well. Cook till the chicken is coated well with the thick gravy.

Serve hot with boiled rice or roti.
