Paniyaram


PANIYARAM




This is an all time favorite South Indian snack made with left over idli-dosa batter. It is crispy and soft at the same time. It is absolutely delicious and taste best when served with coconut chutney.

Ingredients:

1. Dosa / Idli batter- 1 cup
2. Ghee- 1/2 tbsp
3. Mustard- 1/4 tsp
4. Urad dal / uzhunn- 1/4 tsp
5. Sliced shallots- 3
6. Green chilli- 1
7. Chopped ginger- 1/4 tsp
8. Grated coconut- 1/2 tbsp
9. Coriander leaves- 1 tbsp
10. Oil- as required

Heat ghee in a pan. Splutter mustard and urad dal. Add shallots, green chilli, ginger and coconut. Saute till it turns golden brown and switch off the flame. Add this into the dosa batter and stir well. Mix in coriander leaves.

Heat a unniappam chatti or paniyaram chatti. Pour 2 tsp of oil into each holes and heat it well. Pour scoops of batter into each kuzhi or holes and fry on both side till golden.

Serve hot with coconut chutney.
