MUTTA SURKA




Mutta surka is a special dish from Malabar. It can be paired with any curry of your choice. It is soft, delicious and will literally melt in your mouth.

Ingredients:

1. Biriyani rice- 1/2 cup
2. White rice- 1/2 cup
3. Egg- 2
4. Baking soda- pinch
5. Salt- as needed
6. Cooked rice- 3/4 cup
7. Oil- for frying

Soak biriyani rice and white rice for 4 to 5 hours. Drain and transfer into a blender. Add eggs, baking soda, salt and cooked rice along with the soaked rice. Blend well into a medium consistency batter adding enough water. Pour the batter into a bowl.

Heat oil. Pour a ladle full of batter into the hot oil. It will puff up like poori. Flip and cook on the other side also. It should become light golden.

Serve hot with any curry of your choice.
