Muringakka Ulli Theeyal


MURINGAKKA ULLI THEEYAL




Muringakka Ulli Theeyal is a delicious curry from Kerala and its served along with rice. It is basically drumstick and shallots cooked in roasted coconut gravy.

Ingredients:

1. Muringakka / Drumstick- 2
2. Sliced shallots- 1 cup
3. Tamarind- 2 tsp
4. Grated coconut- 1 cup
5. Chilli powder- 2 tsp
6. Turmeric powder- 1/2 tsp
7. Coriander powder- 2 tsp
8. Coconut oil- 1 tbsp
9. Green chilli- 4
10. Salt- as needed
11. Chopped tomato- 1
12. Curry leaves- 1 spring

Soak tamarind in 1/4 cup water for 15 minutes and squeeze the juice out. Keep it aside.

Heat a pan and roast coconut till golden brown. Reduce the flame into low and mix chilli powder, turmeric powder and coriander powder. Saute for 1 minute and switch off the gas. Let it cool down completely. Transfer it into a blender and grind it into a fine paste adding little water.

Heat oil in a pan. Add drumstick, shallots and green chilli. Saute for 2 minutes. Add tomato and saute till it turns mushy. Add the ground coconut paste and 1/2 cup water. Mix well and bring it to boil. Add salt. Boil till the drumstick are cooked well. Add more water if required. Add curry leaves and tamarind juice. Boil for 3 minutes and switch off the flame.

Serve hot with rice.
