Mixed Vegetable Rice


MIXED VEGETABLE RICE




A delicious and simple rice dish. It is just perfect as a vegetarian meal.

Ingredients:

1. Basmati rice / biriyani rice- 1 cup
2. Bay leaf- 1
3. Turmeric powder- 1/4 tsp
4. Salt- as needed
5. Cinnamon- 1/2 inch piece
6. Clove- 2
7. Cardamon- 2
8. Fennel seeds- 1/2 tsp
9. Cumin seeds- 1/4 tsp
10. Oil- 1/2 tbsp
11. Onion- 1
12. Green chilli- 3
13. Ginger- 1/2 inch piece
14. Garlic- 5
15. Ghee- 1 tbsp
16. Carrot- 1/3 cup
17. Beans- 1/2 cup
18. Cauliflower florets- 1 cup
19. Coriander leaves- 1/4 cup
20. Mint leaves- 1/4 cup
21. Cashew nuts and raisins- 2 tsp each

Cook rice with bay leaf, turmeric powder and salt. keep it aside.

Dry roast cinnamon, clove, cardamon, fennel and cumin. Ground it into a fine powder.

Heat oil. Add onion, green chilli, garlic and ginger. Saute well. Mix coriander and mint. Saute well and switch off the flame. Let it cool down completely and crush slightly.

Heat ghee. Roast cashew nuts and raisins separately. Keep it aside.

In to the same ghee, add powdered masala and slightly roast it. Add carrot, beans and cauliflower. Cook till done. Add the crushed onion paste and mix well. Add rice and mix well. Cook closed for 5 minutes in medium flame. Garnish with fried cashew nuts and raisins.

Serve hot with curd salad and pickle.
