MINI MSEMEN / MOROCCAN ROTI




Mesamen or Malawi or Rghaif is a rich traditional square shaped pancake like bread. It is definitely one of the most favorite and popular foods that you can find on a Moroccan table. 

Ingredients:

1. All purpose flour- 1 cup
2. Semolina- 1 cup
3. Salt- as needed
4. Yeast- 1 tsp
5. Warm water- as needed
6. Oil- 1/4 cup
7. Melted butter- 1/4 cup

Into a large mixing bowl, add four, semolina, salt and yeast. Pour warm water and gently knead the dough for at least 10 to 15 minutes. The dough should become extremely soft. Make small balls. Cover them with a cloth for 20 minutes.

Mix oil and melted butter.

Brush the working space with oil. Take a ball and flatten it into a thin circle. Fold all the sides into the center thus forming a square. 

Heat a non stick pan. Pour 1 tsp of oil. Cook the square shaped bread on both sides until done in medium heat. Smear some more oil on top.

Serve hot.
