Mangalore Cauliflower Curry


MANGALORE CAULIFLOWER CURRY




This is an aromatic curry from Mangalore. Mangalore special cauliflower curry has the creamy goodness of coconut milk and a blend of spices that are unique to Mangalore.

Ingredients:

1. Cauliflower- 1; florets separated
2. Grated coconut- 1/2 cup
3. Coconut milk- 1 cup
4. Oil- 3 tbsp
5. Onion- 2
6. Salt- as needed
7. Red chilli- 4
8. Coriander seeds- 2 tsp
9. Mustard- 1/4 tsp
10. Fenugreek seeds- 1/8 tsp
11. Cumin seeds- 1/4 tsp
12. Cinnamon- 1/2 inch piece
13. Peppercorns- 6
14. Cloves- 2
15. Turmeric powder- 1/2 tsp
16. Chilli powder- 1 tsp
17. Tamarind- 1 small piece
18. Chopped ginger- 1 inch piece
19. Chopped garlic- 4
20. Curry leaves- 1 spring

Heat 1 tsp of oil in a pan. Add grated coconut and roast till it turns brown.

Heat 1 tsp of oil. Add 1 onion and saute till wilted.

Heat 1 tsp of oil and slightly roast red chilli, coriander seeds, mustard, fenugreek, cumin, cinnamon, clove and peppercorns.

Add roasted coconut, sauteed onion, roasted spices, turmeric powder, salt, tamarind and chilli powder into a blender. Grind it into a fine paste adding enough water.

Heat 2 tbsp of oil in a pan and fry ginger and garlic till a nice aroma comes. Add 1 onion and saute till wilted. Add the ground paste and saute for 2 minutes. Add cauliflower and coconut milk. Pour water if required for gravy. Cook until well done. Switch off the flame and garnish with curry leaves.

Serve hot with any flat breads.
