Malabari Egg Curry
MALABARI EGG CURRY
Its a simple and tasty egg recipe which is very popular in the Malabar. Malabari egg curry is not too spicy and goes well as a side dish for appam, pathiri, roti etc
Ingredients:
1. Egg- 4
2. Grated coconut- 1 cup
3. Turmeric powder- 1/4 tsp
4. Coriander powder- 1 tsp
5. Fennel seeds- 1 tsp
6. Oil- 1 tbsp
7. Mustard- 1 tsp
8. Shallots sliced- 10
9. Green chilli- 6
10. Curry leaves- 1 spring
11. Salt- as needed
12. Coriander leaves- 1 tbsp
Grind coconut, turmeric powder, coriander powder and fennel seeds into a fine paste adding some water.
Heat oil in a pan.Splutter mustard. Add shallots, green chilli and curry leaves. Saute till wilted. Add ground coconut paste and 1 1/2 cup of water. Add salt. Combine well and bring it to boil. Once it starts boiling, reduce the flame into simmer and crack open eggs into the curry. Do not stir. Cook closed in low flame for 5 minutes. Open the lid and flip the eggs. Cook again for 3 minutes with the lid on. Open and mix well. Switch off the flame and garnish with coriander leaves.
Serve hot with appam, pathiri etc.
