Kumbalanga Moru Curry / Ash Gourd Curd Curry
KUMBALANGA MORU CURRY /
ASH GOURD CURD CURRY
This is a common curry in every Malayali household and its a simple traditional side dish for rice. Kumbalanga Moru curry is delicious and nutritious.
Ingredients:
1. Ash Gourd / Kumbalanga diced into cubes- 1 1/2 cup
2. Green chilli- 3
3. Grated coconut- 1 cup
4. Cumin- 1/2 tsp
5. Salt- as needed
6. Curd- 1 1/2 cup
7. Chilli powder- 1/4 tsp
8. Turmeric powder- 1/2 tsp
9. Coconut oil- 1 1/2 tbsp
10. Mustard- 1 tsp
11. fenugreek seeds- 1/2 tsp
12. Red Chilli- 3
13. Curry leaves- 1 spring
Grind coconut, cumin and 3 green chilli into a fine paste adding 1/4 cup of water. Transfer it into a mixing bowl. Add curd and whisk well with a fork. Add salt.
Cook ash gourd with chilli powder, turmeric powder and enough water. Once its cooked through add the curd mix and stir well. Do not boil. Turn off the gas when its about to boil.
Heat oil. Splutter mustard and fenugreek. Add red chilli and curry leaves. Slightly roast them. Pour this over the prepared curry and mix well.
Serve with rice.
