Kozhukatta

KOZHUKATTA

Kozhukatta is a traditional and popular South Indian dumpling made from rice flour, with a filling of grated coconut and jaggery.

Ingredients:

1. Rice flour- 1 cup
2. Water- as required
3. Salt- pinch
4. Jaggery- 100 grams
5. Grated coconut- 3/4 cup
6. Cardamon powder- 1/4 tsp
7. Ghee- 1/2 tsp

In a pan, add jaggery and 1/4 cup of water. Heat it till jaggery completely dissolves in water. Turn off the flame and drain it. Put it back on stove and mix coconut and cardamon powder. Cook till it becomes dry. Mix ghee. This is the filling. It should become dry or else the kozhukatta will break when we steam it.

Boil 1 cup of water adding salt. Add rice flour when it starts boiling and stir well. Make sure no lumps are formed. Kneed the dough well. Make small balls. Using your hand mould it into the shape of a cup. Fill a spoonful of the filling and roll it into a ball. Cook kozhukatta in the steamer for 10 minutes. After switching off the flame, let it sit in the steamer for 5 minutes before serving.

Serve hot.
