Ghee Roast


GHEE ROAST




Ghee roast is a classic South Indian breakfast which is popular all over the world. It is a traditional dish which is crispy and so delicious.

Ingredients:

1. White rice / Pachari- 1 cup
2. Urad dal / Uzhunn- 1/2 cup
3. Fenugreek seeds- 1/2 tsp
4. Cooked rice- 1/4 cup
5. Salt- as needed
6. Ghee- 3 tbsp
7. Coconut oil- 1 tbsp

Soak white rice and fenugreek together for 4 hours. Soak urad dal for 4 hours.

Grind urad dal into a thick creamy paste adding little water and transfer into a deep bottomed vessel.

Grind soaked rice, fenugreek, cooked rice and salt adding some water into a fine paste and mix it well with the urad dal paste. Let it sit untouched for 4 to 5 hours for fermenting. The batter should not be very runny. It has a thick consistency.

Mix ghee and coconut oil. You can skip coconut oil if you want. Adding coconut oil will make the dosa more crispier.

Heat a flat griddle. Pour a ladle full of batter and using the back of the ladle spread it gently in circular motion till it becomes really really thin. Drizzle a tsp of ghee over the dosa and cook till done.

Serve hot with chutney and sambar.


Notes:
You can cook dosa on both the sides if you want your dosa to be extremely crispier.
