Egg Kothu Kuboos


EGG KOTHU KUBOOS




Kothu kuboos is a recipe inspired from the famous kothu parotta dish. This delicious dish can be served as a main course or a snack. 

Ingredients:

1. Kuboos- 3
2. Oil- 1 tbsp
3. Onion chopped- 1
4. Green chilli- 3
5. Curry leaves- 1 spring
6. Chopped tomato- 1
7. Turmeric powder- 1/4 tsp
8. Thin coconut milk- 1 cup
9. Salt- as required
10. Egg- 3
11. Coriander leaves- 2 tbsp

Cut or chop kuboos into small pieces.

Heat oil in a pan. Add onion, green chilli and curry leaves. Saute till wilted. Mix turmeric powder. Add tomato and cook it well. Pour coconut milk and bring it to boil. Crack eggs into the curry when it starts boiling. Do not stir for 1 minute and then stir well and scramble the eggs. Add kuboos and mix well. Add seasoning. Cook till it becomes dry. Lastly, mix coriander leaves.

Serve hot.


Notes:

You can add cooked chicken pieces for a different variety of kothu kuboos.
