Coriander Rice


CORIANDER RICE




Aromatic and spiced rice made with coriander leaves. It is a simple, quick and flavorful rice recipe which is perfect for any day.

Ingredients:

1. Basmati rice- 1 cup
2. Chopped coriander leaves- 3/4 cup
3. Shallots- 1
4. Garlic- 1
5. Green chilli- 1
6. Lime juice- 1/2 tsp
7. Ghee- 1/2 tbsp
8. Cinnamon- 1/2 inch piece
9. Bay leaf- 1 small piece
10. Cumin seeds- 1/2 tsp
11. Salt- as needed
12. Coconut milk- 1/2 cup
13. Water- 1 1/2 cup
14. Garam masala- 1/4 tsp

Grind coriander leaves, shallots, garlic, green chilli and lime juice into a fine paste.

Wash rice and drain well.

Mix coconut milk and water. Bring it to a boil.

Heat ghee in a pressure cooker. Roast cinnamon and bay leaf. Add cumin and roast it. Add ground paste and saute till the raw smell disappears. Mix rice and roast for 1 minute. Pour boiling water-coconut milk mix and add garam masala. Adjust seasoning. Close the cooker and initially do not put the whistle on. Put the whistle when steam starts coming heavily through the whistle hole and reduce flame to simmer. Cook for exact 5 minutes and switch off the flame. Let it sit for 30 minutes.

Open cooker and stir well. Coriander rice is ready.

Serve hot with raita and pickle.
