Cauliflower Biriyani


CAULIFLOWER BIRIYANI




Cauliflower biriyani is so easy to make and it taste divine. It is rich and flavorful; perfect to cook for vegetarian guests.

Ingredients:

1. Cauliflower florets- 1 1/2 cup
2. Biriyani rice / Basmati / Jeeragasala rice- 1 cup
3. Ghee- 4 tbsp
4. Cinnamon- 1 inch piece
5. Clove- 1
6. Cardamon- 1
7. Onion- 2
8.Green chilli- 2
9. Ginger garlic paste- 1 tsp
10. Tomato- 1
11. Grated coconut- 2 tbsp
12. Chilli powder- 2 tsp
13. Coriander leaves- 1 tbsp
14. Mint leaves- 1 tbsp
15. Salt- as needed

Microwave cauliflower for 5 minutes or drop it in boiling water for 5 minutes. Drain and keep aside.

Cook rice.

Heat 2 tbsp of ghee in a pan. Add cinnamon, clove and cardamon. Roast it. Add onion, green chilli and ginger garlic paste. Saute till wilted. Mix seasoning. Add tomato, coconut, 1 tsp of chilli powder and mint leaves. Saute for 3 minutes and turn off the gas. Let it cool down completely. Transfer it to a blender and grind it into a fine paste adding 2 tbsp of water.

Heat 2 tbsp of ghee. Add cauliflower and 1 tsp of chilli powder. Fry for 3 minutes. Mix the ground paste and cook well. Masala should coat the cauliflower well. Add rice and mix well. Cook closed in low flame for 2 minutes. Mix coriander leaves and switch off the gas.

Serve hot with raita and pickle.
