Black Chickpeas Coconut Milk Roast


BLACK CHICKPEAS COCONUT MILK ROAST





This is a delicious side dish for rice or roti. Black chickpeas filled with the aroma of fresh coconut milk and spices is a true treat to your mouth.

Ingredients:

1. Black chickpeas- 3/4 cup
2. Salt- as needed
3. Coconut oil- 1/2 tbsp
4. Chopped onion- 1
5. Curry leaves- 1 spring
6. Kashmiri chilli powder- 1 tsp
7. Pepper powder- 1 tsp
8. Thick coconut milk- 1 cup
9. Coriander leaves- 1 tbsp

Soak chickpeas overnight. Drain and cook well in a pressure cooker adding enough water and salt. Drain and keep aside.

Heat oil in a pan. Add cooked chickpeas, onion, curry leaves, chilli powder, pepper powder and coconut milk. Mix well. Cook till it becomes dry. Adjust seasoning. Lastly mix coriander leaves and switch off the flame.

Serve hot with rice or roti.
