Beetroot Curd Curry


BEETROOT CURD CURRY




This is a traditional Kerala side dish for rice. It is delicious and the sweetness of beetroot adds on to the flavor of this dish.

Ingredients:

1. Beetroot- 1
2. Grated coconut- 1/2 cup
3. Cumin seeds- 1/4 tsp
4. Curd- 1 cup
5. Salt- as needed
6. Oil- 1 tsp
7. Shallots- 2
8. Ginger- 1 tsp
9. Garlic- 1 tsp
10. Green chilli- 2
11. Coconut oil- 1 tbsp
12. Mustard- 1 tsp
13. Red chilli- 2
14. Curry leaves- 1 spring

Chop beetroot into small cubes.

Grind coconut, cumin, curd and salt into a fine paste.

Heat oil in a pan. Add shallots, ginger, garlic and green chilli. Saute it well. Add beetroot and 1/2 cup of water. Mix well and boil till beetroot is cooked through. Pour the ground paste and heat it. Switch off the flame when its about to boil.

Heat coconut oil. Splutter mustard. Add red chilli and curry leaves. Slightly roast it and turn off the gas. Pour this over the prepared curry and stir well.

Serve hot with rice.
