Bagara Khana
BAGARA KHANA
Bagara Khana is a spiced rice delicacy from Hyderabad. It is a popular dish at weddings and other functions in Hyderabad. It taste great with even a bowl of sambar and its so easy to make.
Ingredients:
1. Basmati rice- 1 cup
2. Oil- 1 tbsp
3. Ghee- 1 tbsp
4. Cardamon- 2
5. Cinnamon- 1/4 inch piece
6. Clove- 2
7. Onion- 1
8. Ginger paste- 1/4 tsp
9. Garlic paste- 1/4 tsp
10. Green chilli- 2
11. Coriander leaves- 1tbsp
12. Mint leaves- 1/2 tbsp
13. Salt- as needed
14. Boiling water- 2 cup
Wash rice and drain well.
In a pressure cooker, heat oil and ghee. Add cardamon, clove and cinnamon. Slightly roast it. Add onion, ginger garlic paste and green chilli. Saute till it turns translucent. Mix rice and roast it for 2 minutes. Add coriander leaves and mint leaves. Pour boiling water and adjust seasoning. Close the cooker and initially do not put the whistle. Put the whistle on only when steam starts coming heavily through the whistle hole and immediately turn the flame into simmer. Cook for exact 5 minutes and switch off the flame. Let it sit untouched for 30 minutes.
Open the cooker and give a good stir.
Serve hot with any side dish of your choice.
