Uzhunnu Vada


UZHUNNU VADA




Uzhunnu Vada or Urad dal fritters is a common snack in south India. In fact its one of the Kerala's fried snack specialties. Its a popular evening snack and everyone's favorite with a crispy exterior and a soft interior.

Ingredients:

1. Uzhunnu / Urad dal- 2 cup
2. Rice flour- 2 tbsp
3. Chopped onion- 1/4 cup
4. Chopped Ginger- 1 inch piece
5. Curry leaves- 1 spring
6. Green Chilli- 4 
7. Peppercorns- 1 tbsp
8. Baking soda- pinch
9. Salt- as needed
10. Oil- for frying

Soak uzhunnu for at least 2 hours. Drain and grind well in a wet grinder without adding water. Batter should be thick. Add 1 tbsp of water only if its too thick to grind. Transfer into a mixing bowl. Beat well using a hand beater and this will help to make the vadas more softer. Add rice flour, onion, green chilli, ginger, salt, peppercorns, baking soda and curry leaves. Mix well. Keep aside for 10 minutes.

Heat oil. Make vada shapes using your hand and deep fry in oil till golden.

Serve hot with chutney and sambar.


Notes:

Dip your hand in water before making each vadas. This will prevent the batter from sticking onto your hands.
